Sundried Tomato and Olive Pesto

(Especially good on whole wheat pasta)

2 cups walnuts
4 tsp dried basil
6 tbsp nutritional yeast
2 cups water (using 1c to boil and soak the sundried tomatoes)
1 can red beans
1/2 cup pitted kalamata olives
2 tbsp lemon juice
3 tsp minced garlic
1 tsp miso
10 pieces sun dried tomato

Soak the sundried tomatoes in 1c of the water.
Combine all other ingredients and blend until the consistency of chunky peanut butter.
Blend the soaking sundried tomatoes, add and blend all together.
Serve over whole wheat pasta - incorporating your favourite veggies if desired.
Left over pesto freezes well.

Also works well as a spread on crackers... extra yummy topped with fresh, chopped onion, tomato and your favourite sprouts...Mmmmm!
