Bannock Bread

A yummy breakfast bread or an excellent addition to chili or soups!

Ingredients:

1 1/2 cup Whole wheat flour
1/2 cup rolled oats
2 tbsp sugar, granulated
2 tsp baking powder
1/2 tsp salt
2 tbsp canola oil
1 cup water, approx.

Directions:

Stir together flour, oats, sugar, baking powder and salt. Add oil and water (enough to make the dough sticky).  Spoon into greased pie plate. Bake in 400 F oven for 20-25 minutes or until browned and tester comes out clean. Cut into wedges. Serves 6

VARIATIONS: Can add 1/3 cup raisins, chopped dried apricots or fresh berries (etc) when you add oil and water.

Apple Bannock dessert:
I like to turn it into a dessert by adding layers of apple slices. Coat your greased pan with a layer of batter. Put a layer of apple, spread spoonfuls of batter randomly over apples, not worrying too much about covering them completely, sprinkle cinnamon and repeat until you run out of batter. I like to have most apples covered by bannock in the top layer. Turn the temperature down to about 350 and cook for at least twice as long - testing with a toothpick. Mmmmm!
